Fighting dogs were stolen in the days when there was dog fighting. That is way pitbull were tattoed for indentification.

A fighting dog (e.g. Pit bull, bull terrier, staffie, Rottweiler) are only fighting dogs if they are trained to fight. If they haven't been trained, they would be as gentle as a pug. Anyway, the physical difference is that, a fighting dog has more muscles and is much stronger. Most of the dogs listed above have been bred just for fighting, so are much more muscular than other dogs and have broader shoulders.
Staffordshire Bull Terriers were bred in an age where Bull baiting and Dog fighting were still seen as 'sports'. Bull baiting is when a tethered bull has trained Dogs set on it so that onlookers can bet on either how many Dogs the Bull can kill or how long it takes for the Dogs to kill the Bull. A similar blood sport was using bears. Dog fighting was organised in pits where people would bet on which Dog would win; this is also how the Pit Bull Terrier originated. Luckily, these 'sports' have been illegal for more than a century. Unfortunately, organised Dog fights still take place illegally in some countries. Today, Staffordshire Bull Terriers make great pets and family members.

Although there are many breeds of dogs used for fighting worldwide, including the Fila Brasileiro, Dogo Argentino, the Tosa Inu & the Presa Canario, the dog of choice for fighting in America is the American Pit Bull Terrier. Occasionally other breeds & mixes are reportedly used in street fights or as "bait" dogs used by some to train fighting dogs.
