The tradition of eating horsemeat has it's roots in practicality and in many countries there is no stigma associated with it.
The original stigma against eating horsemeat began with the Christian church
outlawing it's consumption in order to disrupt some of the pagan religions that
used and ate horses as a form of worship.
Horses have only recently been considered to be companion animals and it would be wasteful not to eat an animal that could no longer work in the field, haul a cart, plow a field or is crippled. Until recently it would be foolish for any family to waste food by simply burying it and could very likely mean the difference between life and death. Livestock owners would provide a merciful
death (as is their responsibility) and in exchange... eat.
It is with modern slaughter techniques (which comes from entire populations of people who have never cared for the animals that feed and clothe them) that mercy and responsibility have been removed from death.
People who care for and love their animals can also honor them in death at the
dinner table. A respect that is sorely lacking in the modern, humane world.
