Some cultures eat with their hands, some with chop sticks. Where knife and fork are used, it could be said, simply: that is just how things are. But, there is also more to it than that--
As to cultural origins, eating with utensils is, no doubt, an exercise in class distinction. Using utensils separates the people with (at least a modicum of) social standing (class) from those without. Among those having higher levels of social standing, wealth and class distinctions are further put on display by use of utensils made with varying degrees of crafted ornateness and of more or less content and value of precious metals.
Another reason -- and this reason also touches on the question as to why Asian emigrants to the west do not more readily, or in larger numbers, adopt utensils over chop sticks -- is that knife and fork are simply the most efficient solid-food eating implements over all alternatives (including chopsticks, including hands). Because efficiency (in contrast to oriental reverence for tradition and for one's elders) is and long has been regarded highly in the west, it is there that fork and knife are and have long since been the standard utensils for eating.
When using a fork and knife, hold the fork in your left hand and the knife in your right hand. Cut one bite-sized piece of food at a time, then place the knife on the edge of the plate and switch the fork to your right hand to eat. Avoid resting your elbows on the table and keep your napkin on your lap.

Italian people are no different than anyone else and yes, they do use a knife and fork and in some cases use a fork with a spoon to twirl their pasta around the fork so it does not splatter everywhere.

we eat with a knife and fork so we don't get are hands dirty because if you imagine how Many germs that get stuck on your hands and if we eat with are hands we would be putting germs into are mouths all the time so that is why we eat with a knife and fork. Also using a Knife and fork during meals is polite....... many people eat hotdogs and burgers with there hands........ many people wash there hands before they eat these meals so they are not spreading as much bacteria..........

Because you use your knife to cut, and your fork to keep your steak from sliding of your plate. It's simply harder to cut your food with your left hand. so you take the fork in the left hand, the knife in the right. That's the reason, why the fork goes left and the knife goes right from the plate.
