any animal can be used for this. in The Bible they used foxes but I'm sure cats were also used at some point. all you need to do is tie a piece of cloth dipped in oil to the tail and set it on fire, the animal will then run attmpting to get away from the fire (which it obviously can not) and will set fire to the field. i'd like to point out that personaly I'm against this ;)
