there is no very special things to do about hygiene with Croissants. It is a pastry, so do the same things you would with bread. The difference is that it contains fat, so it will not turn stale as fast, and that it may be better to keep it in the fridge if you keep them overnight. Anyway they're at their best when eaten fresh out the bakery.
