No, you don't need a HDMI cable for your PS3. this feature is optional. What it does is it increases the resolution of your PS3 meaning you get better graphics. The higher resolution can also be achieved with the purchase of a Component AV cable for the PS3 from stores like target.com for HDTVs that do not have a HDMI connection. If you have a projector TV then it would depend on it's connections. A PS3 will connect with an HDMI to a HDTV projector style TV with a HDMI input with the single cable. If you are not talking about a Projector style TV this may not be possible If your projector has an HDMI input and HDMI passthrough, it would be better to go from the ps3 to the projector and then pass through to the tv.

To use an HDMI cord on the PS3, hook up both the AV multi out cord and the HDMI cord to the TV and turn on the TV to the AV setting. Go to options-display-display options(the first one), and follow the instructions. Once you press "yes" on the confirm settings screen, swith the TV to HDMI mode and see if it works. Many devices including PCs Laptops, and even Photo Frames also have outputs like the PS3 to connect to a HDTV and connecting two devices with outputs will not work.
