Some French traditions at Christmas:
bring in and decorate a Christmas tree (likely to be a fir tree);
have the children prepare their letter to "le Père Noël" (Father Christmas / Santa Claus) and put their shoes underneath the tree;
have a family gathering with a nice evening meal;
for observant Christians, go to church to attend the midnight Christmas mas;
on the day after, get up in time to watch the children find their Chirstmas presents under the tree and unwrap them with excitement.

yes, new France did celebrate Christmas. they had a mass on Christmas eve that was very religious. filled with with liturgical dramas or mysteries and Christmas carols. even though life in quebec has changed very much since the days of the pioneers, many costims and traditions, we still use today.

During Christmas in France, yule logs made of cherry wood are sprinkled with red wine and burned all night Christmas eve along with candles to light the way for Mary and baby Jesus. The main Christmas meal is eaten late Christmas Eve or in early Christmas morning, after the church service in the middle of the night.
In France, just like in America, if you are catholic then you do. 
Weirdly, many families in France decorate their house with mini Santa's climbing up a string to their roof/balcony, villages have similar Christmas lights to england.
