Mr. Crabs has a nose.
Actually, lobsters don't have a true nose - if you consider the function of a nose in most land mammals. They do have a rostrum which looks like a nose, basically a point that protrudes out between the eyes, which is mostly for protecting their delicate eyes especially during battle. Their chemical sense - what we might call their sense of smell - is quite acute but is located in their antenna and legs/feet.
His last name is Krabs.

I assume you are alluding to Mr. Krabs from "Spongebob Sqaurepants". If so, Mr. Krabs is voiced by Clancy Brown.

The book you are referring to is likely "The Nose Book" by Al Perkins. In the book, there is a monster named Mr. Green Nose who has a large green nose. The story is a fun and silly read for children.
His last name is Krabs.
