Obi-Wan Kenobi and Yoda are the only Jedi left after order 66. This is the true for the movies, but not the EU (extended universe). e.g. Shaak Ti in The Force Unleashed video game. Jax Pavan from the Coruscant Nights series, and there are actually plentiful abundance of Jedi that show up throughout the EU that did not get killed after order 66. But for those who are just after hardcore movie lore Yoda and Obi-Wan are a good bet. P.S. In Revenge of the Sith Obi-Wan changes the signal and wards all surviving Jedi away from Coruscant so there is alot of leeway given to the EU.
There are a number of Star Wars characters whose last name starts with a v: Darth Vader, Supreme Chancellor Valorum, Quinlan Vos, Asajj Ventress, among others. There's not a known major Star Wars character whose first name starts with a v.

Quinlan Vos got killed in order 66 on Kashyyk. You don't see him in the movies but in the comics you do. Quinlan Vos is overlooking the battle when an at-tp walker shoots Quinlan Vos and the platform blows up. He plunges to his death.
Jedi holocrons are used only by Jedi and were primarily used for storing phenomenal quantities of data. Quinlan Vos referred them as "meant to be teaching devices" in the graphic novel "Clone Wars: Volume 8: The Last Siege, The Final Truth"
