This, like most other psionic topics, is widely debated. However it is well known that they DO work. The simplest answer is that nobody is really sure how they work, although there are many theories.

My personal theory (based off my own research, experience and theorising into late nights) is:

All things are made of energy, and energy resonates at particular vibrations. All things have a state of vibration. If you take a very powerful microscope, you will see that everything vibrates and moves on the atomic level. Because crystals are much more stable than a human body (or any creature's body), they are good at transmitting it. Also, as every crystal has a different vibration, and wavelength (which gives it its colour), they will each affect us slightly differently. When we have a cold, or get disease, our vibrations can be 'lowered'. The crystals raise them again. That is my theory on why crystals work.

Crystal are used for taking the work as transducers.

they are place on where mechanical vibration arise occasionally or majorly. when they get mechanical vibration they generate voltege on the opposite surface and this voltage passed to processing circuit for further processing.
