Pippin sang to Denethor a song sung by hobbits of the Shire. Billy Boyd actually wrote the song himself, with a one-day time limit! The song is rightly called "Pippin's Song." The song can also be found part of the way through "The Sacrifice of Faramir". Pippin begins singing about 2:35 minutes into the song.

Pretty much just to keep his eyes on him. You see, Pippin looked in to the Palantiri and that made Sauron think he was the one with the ring. That was partly a good thing so Sauron wouldn't be after Frodo. But it also put Pippin in a lot of danger and Gandalf didn't want him to get captured and taken to Sauron who would've then questioned him until he found out about Frodo and his plan. Hope this helps.
