Audio is recorded on a narrow linear track, erasing that part of the video tracks, where part of the video blanking would record. When played backed, the missing part of the video blanking pulse is simply synthesized by timing circuits. It is just black level anyway.

To create the diagonal tracks the video head is a special cylindrical helical scan unit with 2 to 4 tiny heads spun through a slot at high speed by a synchronized brushless DC motor. The helix groove around the cylinder that guides the tape is angled such that as one head leaves the edge of the tape the next head enters, so there is always a video head in contact with the tape.

Digital video tape uses a similar diagonal track system, but lacks the separate linear audio track as the audio and video are encoded together in the same digital signal.

Video drums have two (or more) heads so that the tape need only encircle the drum part way. During playback, the head signals are switched so that the head in contact with the tape is connected to the playback circuits. Back to the stationary head - the analog audio tracks are recorded on the opposite edge of the tape from the control track. This is a very simple explanation.
