There are several things that appear in every Disney Pixar movie.

The Pizza Planet Truck (first seen in Toy Story) has been in every Disney Pixar movie so far except The Incredibles.

A113 can be seen in every Disney Pixar film. A113 was Brad Bird's and John Lasseter's (both important people to Disney Pixar, i.e. Brad Bird has been a director for some Disney Pixar movies, etc.) classroom number at CalArts.

John Ratzenberger, an actor, also plays the voice of someone in every Disney Pixar movie. He is considered Disney Pixar's official "Good Luck Charm." He plays the head waiter, Mustafa, in Ratatouille, the Underminer in The Incredibles (the villain seen at the very end of the movie), and Hamm in Toy Story, etc.

Why doesn't Disney use traditional animation in their movies anymore?

I think it's safe to answer this question with a yes. The last movie that used traditional hand-drawn animation was The Princess and the Frog. And I believe it's still used on the Disney Channel show Phineas and Ferb. So to the best of my knowledge, Disney does still use traditional animation, and I sincerely hope they will continue to use it.
