They eat soy beans, corn, beans, and things that they grew in there garden. Back then they ate whatever they grew out of their garden. They did not have the money to go to the store and get whatever they want.

Some farmers had an agent that would sell them food and groceries called a factor, especially in the south where they farmed cotton. Farmers commonly ate corn bread (because corn was an abundant crop) and pork, generally smoked bacon cooked over a house fireplace.
