you can do many things
1. make a glaceon (make it happy and lvl it by the icy rock on route 217) (very high sp.attack)
2.make a leafeon (make happy and lvl it next to mossey rock in eterna forest) (high attack and defense)
3.make a flareon (use a fire stone on it) (high attack)
4.make a jolteon (use a thunderstone on it) (high sp.attack and very high speed)
5.make a vaporeon (use a waterstone on it) (high sp.attack)
6.make espeon (make happy and lvl it during the day) (very high sp.attack and high speed)
7.make a umbreon (make happy and lvl at night) (high sp.defense)
8. just level it as eevee(not the best idea) (no good stats)

to make a Pokemon happy make sure you use a lot of vitmins and a soothe bell they will love you
