Buildings can be made out of any of them. A lot of buildings are made from sandstones, they should be fairly easy to recognise as they will always have a relatively fine granular texture and very few large crystals. There are a lot of buildings made from granite (although a lot of "granite" actually isn't but will still be igneous) look for buildings with an obviously distinguishable patchwork texture of largish crystals. The most obvious building build from metamorphic rocks is the Taj Mahal in India
It depends on the cave. Since many caves are limestone (water carves it nicely), you usually find limestone. But granite is common in New Hampshire & Vermont.
