A bantha is a large creature that lives on the planet of Tatooine. It can be seen in both the original Star Wars Episode 4 movie as a creature that the sand people ride, and also briefly in the 1997 re-released version of Episode 6: Return of the Jedi. It is a large brown creature 2-3 metres high and 4-5 metres long with big curved horns on the side of its head.

Fodder is another word for food.

Therefore bantha fodder is basically food for a large animal.. In the context of the line, it means 'you're in trouble', or 'you're dead', 'your dead meat' and so on.

It is a reference to the phrase 'cannon fodder', whereby waves and waves of soldiers are often sent into a battle with unsurmountable odds, are are often instantly killed by cannons, rockets, machine guns, and so on. All you are is 'food for the cannon', something for the cannon/guns to kill.
