A complete answer would take many more books than I have read on this subject. However, my understanding is that IF your body doesn't break down the food properly (for many reasons: poor chewing, not enough or missing enzymes, stress preventing proper digestion etc..) then it can start allergy or intolerance responses. You can become more and more reactive to many foods as this cycle continues. The size of molecules entering the blood stream from the digestive tract is affected and this attracts our immune system setting up "Allergies". We are fighting off the very food we need because it is incompletely broken down. So... listen to your mom! chew your food, and don't overeat cause it uses up enzymes. There is also a theory about blood types (which are antigens remember) making you more reactive to certain foods which make your blood aglutinous (sticky) and then your body doesn't work very well at carrying out its jobs.
