Unfortunately you can't.
If it is one of the Games that are compatible with the PS3 then you insert the disc into the slot and the game will load just like a PS3 game. The fact that it is not a Blu-ray disc does not matter as the PS3 can also play DVDs and CDs.

You open the game case, take the disc out, open the PS1 by pressing the "open" button, lifting the lid a BIT more, placing the disc in the center, gently pressing on the middle of the disc until it clicks in place, close the lid until IT clicks in place, & press power.

Final Fantasy 7 for ps1 is a 3-disc game. At a certain point in the game it will prompt you to insert disc 2 and later disc 3. Make sure to get Knights of the Round before fighting the final character.
