To bring out all the flavors, I like to do it like this: In a saucepan, very gently simmer milk (use a diffuser if possible, to keep it from curdling too much). While it's simmering (about 15 minutes), toss in a couple of cinnamon sticks and some fresh ginger (chopped, sliced, etc.). Separately, make Chai teas concentrate in a mug. Let it steep for a while, the dump it into the milk. Let it all simmer for another 10 minutes, skim the milk solids off the top, and drink. ------------------------ How to make a simple Indian chai for 2 people. 1.
