Beatrice doesn't exactly say this. She says, in response to Leonato's remark that he hopes she will someday find a husband (2,1):

an account of her life to a clod of wayward marl?

Since The Bible story was that God had created all men from earth, which is to say dirt, Beatrice is basically saying she doesn't want a husband. She then turns the legend on its head, saying that it would be a poor thing for a woman to acknowledge dirt, dust and mud as her superior and she will have none of it. She is not suggesting that she would marry someone from another planet or anything--she doesn't want to marry anyone at all.
