If you mean why did they not cut the anchor off to save weight then they did not because of what the anchor weighted in proportion to the rest of the ship. The anchor weighted about 16 tonnes. The rest of the ship weighted about 48,000 tonnes so it would not have made a difference.

They didn't run into it and stop, they hit it and scraped past. Even if they'd been able to stop, they wouldn't have had enough chains or rope on board to keep something as heavy as the Titanic afloat.

The crew tried to avoid a collision, but the ship was moving too fast and the lookouts didn't have binoculars, so they couldn't see the iceberg early enough to go around it.
