Oola rejects and fights against Jabba not because she somehow thought she could "win" or escape, but because she believed the punishment for her resistance was better than what would happen to her if she obeyed. Oola had served as Jabba's leashed dancer and slave girl for several months, forced to satisfy any and all of the Hutt's perverse sexual desires, raped and humiliated many times by her disgusting master. She came to fear his sexual advances and would resist them even though she had little hope of dissuading her lecherous master. This disobediance woould lead to punishment, often times being beaten or whipped by the gamorrean guards. Oola, however, viewed the beatings as a better alternative than being forced upon by Jabba and continued to reject him. So, in Return of the Jedi when Jabba pulls on her chain and orders her to come to him, Oola is aware of his intentions and pulls back believing she will be beaten again but spared the dishonor of being used by the hutt. Jabba however has grown tired of her disobediance and decides she is no longer worth the effort, pulling over the trap door and dropping her into the rancor pit.

No I don't think so. If you look at Oola she doesn't appear to be that strong and according to wikipedia she wasn't fed very much and thus weak from malnourishment. I think the movie shows that. When Jabba does pull on her chain you can definitely see her yanked forward, and once she plants her feet she is slowly being dragged closer, only really being able to keep away out of sheer desperation. I believe Jabba could have easily pulled her onto his dais if he had wanted, but had decided to punish her for her disobedience instead.
