When you press down on a piano's keys, this triggers a series of levers and bars. At the end of one of these bars is a felt tip which strikes the strings. So, it does not pluck, it hits the strings.

A harpsichord works the same way as a piano, except instead of striking the strings, it has a little hook that plucks the strings.
