well it'd be hard to answer that all in one go. it'd be best to get some music books of some sort. but if i were to sum it all up, i would say that the symphony constantly grew over time, and there were new instruments constantly being either invented or modified. this gave way to a lot of newer formations and combinations of instruments, due to new desireable timbres one could get from such new combinations. for instance when the damper pedal was first added to the piano, it created so many new ways to approach the instrument, so of course new styles emerged with the other instruments accompanying it as well. :)

throughout different periods you can hear pieces that feature certain instruments. in a lot of cases this was because that instrument was new and composers were trying to write pieces that would premier that instrument to the public. "wow did you hear that new Mozart piece?! i couldn't believe it, the Trumpet went so much higher than I'm used to hearing it, and it had a much better tone and steady pitch as well. that song was great!"

but symphonies (generally speaking) grew to a peak level during the romantic period in music. i.e. Wagner and the like. but really, i suggest just getting a book, and some CDs of each century's highlighted pieces. and it will sound very clear how it all developed.
