Simply click a note, press 3 on your keyboard, and there's your triplet. You can also do this by clicking "Score" in the Noteflight menu and clicking "Create Tuplet" Hope that helped.
Go to the pull out tabs on the right and find "Staff" tab (or simply click on the key signature itself on the music) and it'll give you a list of key signatures to choose from. You can also change the modes to major and minor, and even to some of the rarer forms. Hope this helps! =D

Well David Arnold and Michael Price composed them, and there are several different themes, so it depends what you're after. Sherlockology may have the answer- type in the theme in a google search and see what you come up with. I know that Noteflight has some themes for different instruments, but you need an account (unless you use the link on Sherlockology to get the score- but that is for the Taxi Chase Theme).

No, it has all four instruments, you just use the 2 buttons of the d-pad and 2 buttons of the geometric figures (to the right) to control the instruments. You also have to switch between instruments. For vocals, you still use the d-pad and the figures which is a real drag for me, but at least there is a rock band for a handheld!
