In terms of how they were written (musically, not the lyrics), they were quite "free". There were hymns etc. sung at church, which were very serious ballads. They were slow and most songs written throughout the Medieval Period were Christian and slow and serious. There may have been Folk Music, of course they wouldn't have any electric instruments, pianos, etc. They wouldhave mainly played the fiddle or perhaps a kind of Flute and along the likes of those. I would imagine the songs were high, definately keeping in the pitch range of the violins.
