The Native Mexicans had been drinking an undistilled version of tequila, called pulque, for centuries. The Spanish were the ones who made the next step and distilled the pulque. However, no specific name is known.

They put an altar or ofrenda ("offering"), which often includes orange Mexican marigolds (Tagetes erecta), and papel picado - "perforated paper", the Mexican folk art of papercutting into elaborate designs. The ofrendas include foods that the deceased used to like, such as mole, tacos and chiles en nogada. To entertain the souls, toys are brought for dead children, and bottles of tequila, mezcal or pulque or jars of atole for adults. Candles and pictures or paintings of the deceased are also commonly added.

By 1540 most of Mexico was conquered by Spanish conquistadors. Most foods included corn, beans, tomatoes and avocados, pig, goat and chicken as ingredients. Some traditional foods included tortillas, pozole, tacos, tamales and enchiladas. Beverages such as chocolate and pulque were common, and the recently introduced coffee (brought by Spanish explorers from the Middle East) was very popular.
