Many scenes are shot numerous times in order to get the one that is perfect according to what the director wants. If the actors drank real alcohol they would be too drunk to finish the day's work. Apple juice makes a great stand-in for beer and whiskey and although the actors may have to take extra trips to the 'outhouse', they are at least able to finish the requested dialog without slurring their words.
