Guitar shredding is basically when you play VERY fast. Shreding can consist of tapping, alternate picking, hammer ons + pull offs etc.
Songs such as "Seek and Destroy" by Metallica have shredding in the solo. Most shredding solos tend to be on the higher strings, Such as part of the 2"Soothsayer" solo by Buckethead.
However you can shred on lower strings. On "Raining Blood" by Slayer the part before the 1st verse is classed as shredding I think as they are playing very fast on the Low E string.
I have to say your basicly right except shredding is more about the sweep picking, arpeggios, Tremelo picking, there are lots of really good shredders some are really fast but sound terrible and some are not as fast and sound great.
