That is a matter of debate, of course, but a good bet is that that started with Franz Liszt (Romantic era). Liszt was one of the first people to give full concerts, largely of his own works and transcriptions, and - this is the important part - charge very hefty fees for it. Beethoven, Haydn and others played for princes and kings, and were paid, of course, but it was a pittance compared to what Liszt demanded - and got. That set the precedent.
