Usually orchestras do not have Guitars. They do not have fretted bases. There might be an occasional piece that uses them but such is rare. Orchestras normally do not usually have a sax. Ravel used one in Bolero.
Some that I know of are the viola d'amore, guitar, mandolin, Zither, viol, and koto. These are the more commonly found instruments that are not often seen in an orchestra. there are hundreds of other stringed instruments, but they are quite obscure.
You do not usually find a guitar in an orchestra. A banjo is not normally found either. Though for special scores they will be added. Eric Copeland's Western Suite includes a part for a six string banjo.

In the woodwind section, the instruments found in there are the piccolo, the flute, the clarinet and the oboe. In the strings section, the instruments found in there are the violin, the viola, the cello and the double bass. In the percussion section, the instruments found in there are the gloxinspiel, the steel drums etc. There are more instruments found in the percussion section of the orchestra.
