each key is connected to what is called a hammer. It kind of looks like a hammer, but it has padding on it so it doesn't damage the strings. when a key is struck, the hammer falls and briefly strikes a string in the piano which is tightened so that when it vibrates, it lets off a certain pitch. BTW, each key also has a separate string, just in case i wasn't clear on that... electic pianos have the pitches from a regular piano recorded... hitting a key is just like hitting a key on a computer pad- it is connected to the digital pitch and plays it when struck.
We cannot hear high pitch sounds that well because our ears aren't as good as elephant ears. When sound is very high we cannot hear it at all.
