If you accelerate and the transmission shifts to a lower gear of the overdrive disengages the RPMs will increase. If the vehicle has a manual transmission a slipping clutch will cause the RPMs to increase if the clutch is defective.
Stock Harleys come out of the showroom with fitted with a rev limiter that cuts the ignition out at around 5600 rpms. Gets kinda scary when you overtake a truck and halfway there the motor starts to cut out. Can be overcome by fitting an aftermarket ignition module that will rev out to about 7000 rpms.(more than enough for a harley)

The rev limiter on the 2005 Sportster is built into the ignition module. It is not possible to remove it. You can upgrade your module to "after market" modules that can increase your rev limits to 6000 RPMs and beyond.

The RPM rev up when driving because of the way your car's transmission works. Essentially, the transmission is responsible for sending power from the engine to the wheels. The transmission's job is to change the RPMs that the engine is sending, so that the wheels can turn at the correct speed. When you accelerate, the transmission increases the RPMs that the engine is sending to the wheels to provide more power. The faster you accelerate, the more the RPMs will increase. This is why you hear the RPM rev up when you are accelerating.
The 1999 Yamaha Virago XV1100 LCÊdid come with a rev limiter. This means that the RPMs of the vehicle won't go over a set limit.
If your testing this with the vehicle in park it won't go over 3000 rpms because the rev limiter kicks in so you don't do damage to the engine. If you are in drive and you step on it when it's safe to do so, it should go well over 3000 rpms.
Perhaps you have not engaged the clutch? The accelerator is designed to increase the RPMs. If you provide no resistance it will rev until it explodes.
