If you mean the music genre "pop" it stands for popular. It might also be a subtle metaphor comparing the largely 'sweet and bubbly' nature of the genre's music.
If you mean the carbonated beverage, 'pop' is just shortened from 'soda pop'. It seems like the term 'pop' is more commonly used in Canada, while the term 'soda' or 'soda pop' is used more commonly in the United States.
