The quality of the seeds, fatty-acid composition, oxidation, filtration, packaging and storage conditions all matter. So, in simple terms: Cold pressing = mechanical extraction with controlled processing and limited subsequent refining. But a better question than simply asking whether an oil is “cold pressed” is: What temperature does the oil actually reach during extraction, how is the seed prepared, is water added, and what happens to the oil after pressing?
