well there are many answers for this question but let me give you one.vedas are composed of shabdhas[words] and shabdhas are composed of aksharas[phenomes].aksharas means one that cannot be destroyed.hence the words are eternal and so the vedas.if someone says that all words are eternal then answer him that only vedas are eternal because only in sanskrit the phenomes are eternal such as 16 vowels and 36 consonants are from begining and will remain till the end.
