Almost the salt in the U.S. is mined, mostly from a huge deposit of salt under the Great Lakes. Sea salt is made from the drying of sea water as the name implies, which many countries have to do because they don't have large enough deposits to mine. Sea salt is used a lot in gourmet cooking and that is the salt used in New Orleans.
