Italian, French and Spanish are all romance languages (they are in the same family). If I were you I would learn Spanish first, mostly because there are alot more places and people in the world that speak spanish than italian...but as far as ease of learning, they are about the same.

Most colleges couldn't care less. However, on paper, consistency (taking the same foreign language for three years) can seem like dedication. Ultimately, this depends on what YOU want, not what the college wants. If you do not like Spanish and taking French will make you happier, take French.

This would be a choice made entirely on your personal situation. Practically speaking, unless you have a specific need for German, your chances of using Spanish would be much higher. But by all means, either language would be a great way to expand your mind and introduce you to another culture.
