Intelligentes is plural feminine because you adress to ladies.
Note : sachiez is the present conditionnal first form of the verb "savoir", often used after que ..

Vous êtes très intelligent, je suis impressionée que vous connaissiez le français.
You are very smart I am impressed that you know French
(connaître is the accurate verb in this context) and you adress to a male.
To be more precise : the adjectives are not capitalized in french, on the contrary to english in which adjectives and common nouns related to countries are capitalized.
