If you are refering to the caravans as the conestoga wagons then it is because cloth was naturally white to a dull grey. There would be no reason to dye them especially as this would have been expensive. Also white reflects sunlight and would keep the wagon cooler in the summer. If you mean Dodge caravans the mini van, there are a lot of them that are purchased as company or fleet vehicles and white is the least expensive color there is.
