Most competitive colleges, like the Ivy League universities or Stanford, MIT, etc. like to see at least 5 - 6 AP courses on a high school trascript.
Most high schoolers take AP courses in their junior and senior year...so around 3 to 4 AP classes per year is ideal, if you are considering applying to those schools.
I'm not too sure on the community service hours...some schools *require* 80 hours. 80+ hours will be fine.

I know not about Hahvahd or Princeton, but I know that Yale does admit students who are enrolled in early honors type programs who have taken community college courses to supplement their high school education, or to take courses not offered at their high schools. It is, however, somewhat difficult to get college credits from the community college courses to count towards your Yale degree if the community college courses were taken during high school. I think it would be valid to assume that Harvard, Princeton, and the other five Ivies have similar policies.

Ivy league schools would be the most competitive and a local college or university would be less competitive. Local students attending their state university or community college can expect less competition and lower tuition.

That depends on which college you plan to attend. It can range from community colleges who will accept anyone to elite ivy-league type schools where an array of extracurricular activities, community service work, an outstanding GPA, and high SAT acores are often required to be admitted. Furthermore, sometimes race and even income (even though you may satisfy all above requirements) can have an impact on your chances of admission.
