Tybalt actually did it in a kind of accident, he didn't see where his blade was going. Mercutio only died because he couldn't see Tybalt's blade because Romeo had jumped in between them to stop the fight.

+Tybalt wants to keep fighting, so he thrusts his rapier in the gap between Romeo's arm and body.
+Mercutio nor Tybalt saw the rapier, until it was too late and the rapier landed square in his chest.
When Tybalt and Mercutio fight, romeo trys to defend Mercutio but ends up having him killed. Mercutio dies from Tybalt bringing the sword from under Romeo and stabbing Mercutio.

The play isn't about Mercutio. It's about Romeo and Juliet. Therefore Mercutio, even though he's a great character and all, was disposable.
Tybalt killed Mercutio. First Tybalt was insulting Mercutio, Mercutio got furious and Tybalt and Mercutio took out their swords and began to fight. Romeo tried to break the fight up but instead blocks Mercutio from getting Tybalt, while Tybalt was able to stab Mercutio right in the gut.
