It really depends upon the time period the particular production is set in. The 1996 Baz Luhrman movie had late 20th century dances and music, the Stratford Ontario production from 1994 which was set in the 1920's had dances from that era and so on.
The first productions would have had dances which were common in Shakespeare's day.
