You are asking two questions here.

First, how many plays? There are thirty-six named in the First Folio plus Pericles which was published earlier under Shakespeare's name and The Two Noble Kinsmen which was published later and on which Shakespeare is credited as a co-author with John Fletcher. There are also two plays, Cardenio and Love's Labour's Won, which are lost. That's forty at least, although we do not have them all.

Which are the most famous? This is hard to say, and people's opinions will differ. Which plays people choose depends often on which ones they studied at school. Anyways, Hamlet and Romeo and Juliet are generally on everyone's list. The tragedies Macbeth, Othello, King Lear and Julius Caesar also have a good chance to make the list. But so do the comedies Much Ado About Nothing, Twelfth Night, The Taming of the Shrew, The Tempest and The Merchant of Venice, and the histories Henry V and Richard III.
