Surtido is a traditional Mexican dish that involves preparing a variety of meats and vegetables. The basic steps include marinating the meats, typically pork, beef, or chicken, in spices and citrus juices for flavor. Next, the marinated meats are grilled or cooked alongside assorted vegetables, such as peppers and onions, until everything is tender and flavorful. Finally, the dish is served with tortillas and garnished with salsas or fresh herbs.

At least five of the favorite dances are strung together to have the Surtido Boronganon. The music is similarly exciting and diverse. The tempo changes from lively and sprightly 2/4 music to lively Waray melodies in 3/4 time. The dance can feature any of the following dances like the ever favorite Kuratsa Menor; the religious dance Gozos; Borongan's version of dove-dance, the Alimukon or Salampati; the wedding dance Melendres danced to the folksong Adios na Nanay ug Tatay; the Kuradang, the courtship dance Linggawen where women sway red scarves; the butterfly dance Ay, ay Alibangbang and the Boronganon quadrille or Ay!
