Mostly because the timing had to be bang on. There were so many things which could have gone wrong with the fake death plan, quite a lot of which actually happened.

1. The potion could have misfired. It was supposed to keep her apparently dead for a very specific time, and how easily that could have gone wrong! Either Juliet could have woken up in the middle of the funeral, giving the game away, or have stayed apparently dead long after Romeo broke into the tomb, was found and put to death.

2. The plan involved Romeo sneaking back into Verona where someone might have recognized and killed him. In fact he was spotted and a better swordsman would have killed him.

3. The wedding might have been pushed forward a day, which would involve Juliet taking the potion a day early and all the timing being thrown off accordingly. This actually happened, yet Friar Lawrence does not seem to twig that the changed wedding date meant that even if Friar John had got his message through, Romeo would have arrived a day late.

4. The risk that Friar John might have been prevented from reaching Romeo is not great (although that did happen) but why not also send the message through someone who was also likely to get through? Someone like Balthazar, for example.

5. The plan involves leaving Juliet unattended for a long time. There are so many things that might have gone awry (and did) which could have been prevented by having someone keeping a full-time watch on the corpse. Someone like Friar Lawrence, for example.

6. I don't know what their burial customs were in Italy whenever this is supposed to have happened, but I am so glad that embalming or sealing the body in an airtight casket or burying the person under six feet of earth were not among them. There are so many things they might do to an apparent corpse that would have thrown the plan askew. Unexplained sudden death? Let's have an autopsy!
