Perhaps the first physical experiment that proved rotation of the earth was Foucalt pendulum. Well aligned pendulum always oscilates in the same plane. As the Earth rotates below it, during the day rotation becomes visible (search e.g. Wikipedia for further reference). Today there are many more sofisticated experiments that can prove movements of the Earth. For example we can measure shift in wavelengths of light emited by stars as we move toward them on our orbit around the Sun (Doppler effect).

Simply by observing the position of celestial objects such as the sun & stars ! If the Earth didn't rotate, the sun would be in exactly the same position each day, and the side of the planet away from the sun would be frozen ! Additionally, if the earth wasn't rotating, the stars would be in exactly the same places in the night-sky !
Galileo did not prove that Earth was not flat (It had already been agreed that it was round). Galileo invented the telescope and used it to prove that there were objects which did not orbit the Earth, supporting Copernicus' Heliocentric model for the universe. The Earth was known to be round by the ancient Greeks, but I do not who it found out initially (sorry).
There are wonderful pictures from space of earth. In them you can see it is round. The Ancient Greeks knew it was round.

We know that the Earth rotates west to east (causing the sun to rise in the east and set in the west). And if you look down at the earth from the North pole, it will be rotating counter clockwise. if you look up at the earth from the south pole, then the earth will be rotating clockwise.
Build a very large pendulum and set it in motion. Then observe, think and explain what you observe over the course of a day.

Scientists were able to prove that the Sun rotates by observing the movement of sun spots over time.
