I think there are a few factors:
1. red hair is the rarest hair colour, and people are often intolerant of the unsual;
2. social learning - we see red haired children being bullied or victimised at school for their hair colour and we learn very early that red hair is associated with negative consequences
3. social definitions of what is attractive currently do not favour red hair - although there have been times when this has been challenged eg Julia Roberts was famous for her 'just the right shade of red' hair
