Usually a business document is single spaced (actually MS word, I believe, is set standard for 1.15 spacing).
Double space the document.

The body of a business letter, or most letters for that matter, should be single spaced. However there should be a double spacing in between each paragraph. (Don't forget the special spacings in certain areas, such as for signatures and after mailing information.
It's often done so someone can make notes or comments between the lines (as opposed to writing everything at the end of the document).
"Simple interline" usually refers to single spacing in a word processor. This means there is no additional spacing between lines of text, resulting in a tighter layout. If you are looking for double spacing, you would need to specifically select that option.
